KNOXVILLE, Tenn. (TVC) – What started as a hobby turned into a growing business for one University of Tennessee student.
Lydia Fisher is balancing a full-time course load while running her own bakery, Sweet As Honey. Known for her standout cookies, Fisher’s baked goods keep customers coming back for more.
Fisher says managing school, business and her personal life requires careful prioritization.
“But really, I’ve had to figure out what I value most in life in general — what takes my priority, if it’s business or school or being a Young Life leader,” Fisher said.
Between classes, Fisher spends much of her time baking and fulfilling orders. As her business grows, so does the demand on her schedule.
“It’s been a lot recently because I am doing a lot more and trying to grow the business,” she said. “You should see my calendar — it’s crazy color-coded.”
On most weekdays, Fisher can be found baking from 1 to 4 p.m., while weekends are often spent working pop-up events.
Fisher says her long-term goal goes beyond just selling baked goods.
“I would love to have a store one day,” she said. “I always say I don’t want to just open a little cookie store. I want to create a place where people can come and have community and be together and just hang out — like coffee shop vibes, but I don’t drink coffee.”
She says her motivation comes from the joy her treats bring to others.
“That’s why I do it — I love the way someone’s face lights up when you give them a cookie,” Fisher said. “People just love cookies. It’s just happy.”
Customer Scott Daley says the quality of Fisher’s baking stands out.
“If you want a moist, tasty, great cookie like this one — oh, I’m not supposed to eat with my mouth open, but I can’t help it — they are just so good,” Daley said. “Come see Sweet As Honey if you want some of the best cookies in Knoxville.”
Fisher agrees.
“These are the best cookies you’ll ever have,” she said.
